I met with a potential bride for a Sept wedding. She wants to have "multiple smaller cakes in fall flavors". All I can think of is pumpkin spice cake (never made one and have NO recipe either). Does anyone have any good fall flavor ideas AND the recipes to go with?? My most popular is WASC and Choc WASC, both of which don't scream fall. Thanks for your ideas!

you need to find the gourmet thread for cakes. It has some wonderful ideas for cake flavors and fillings. Several people shared their list of cake flavors they offer and there are some great ones!!!

SPice cake with a cream cheese filling... cheesecake cake with apple filling..

Caramel cake .... on and on

these cakes can be made as a variation of the WASC.....

that thread is wonderful and full of recipes, etc... let me see if I can find it for you

Chocolate is good year-round, so you can stick with that. Also, don't forget spice cake! I LOVE it! I had a May wedding and still had spice cake! And, don't forget Red Velvet!

Fall flavors:
apple
ginger/gingerbread
apricot
caramel
date-nut
cranberry
sweet potato
spiced rum
butterscotch

Mixes can be doctored by changing the liquid, adding fruits, nuts, spices and enhanced with different fillings.

Spice, pumpkin, apple, apple caramel, carrot. Just ideas - mix with flavored frostings and fillings. If you could do a candy apple with a cinnamon gel filling, caramel apple, pumpkin pie cake with a whipped cream filling with toasted coconut.

Now that I think of it, I may develop a candy apple cake myself. That sounds good.

WOW, these all sound soooo good. I'll do some research for the WASC variations. I have my WASC down and it comes out perfect, so like to stick with what I know works and add to it. THANKS! icon_smile.gif

Try the "decadent autumn chocolate spice cake" in the recipe section with cream cheese frosting. I used this recipe year before last for a fall event and it was a huge hit. Very good.

I have a pumpkin cake that has dried cranberries, nuts and white chocolate chips that is super easy and is moist and wonderful....I make it tons of times in the fall season. E-mail me at [email protected] if you want the recipe.

Also, carrot cake, fresh apple cake and blackerry jam cake are great fall flavors.....again, if you need recipes, email me at [email protected]

Fillings could be caramel, maple buttercream, jams, cream cheese icing, etc.
