How far in advance can you bake cupcakes and how do you keep them moist? I am making some for a family reunion this weekend. When I've made cupcakes in the past and not iced them right away, the tops get 'sticky' and very hard to get them decorated. How should they be stored after baking, but before decorating?

Freeze them! Bake your cupcakes. Let them cool. Place them in freezer zip top bags. When you are ready to frost, pull out the cupcakes, let them defrost IN THE BAG. If you take them out you will get condensation on the cupcake. I always make cupcakes out of my extra batter and freeze them for future use.
