I was watching an episode of cake boss, and was watching him make gum paste roses, I noticed when he used the 5 petal rose cutter, his petals looked stiff already, mine seem so floppy. His roses looked so beautiful, they held their shape alot better than mine. Is it the kind of gum paste he uses, does he let them dry out a bit before he puts the roses together, just wondering what everyone else does. I'm still looking for my perfect rose, any hints?

I use a mixture of fondant and gumpaste. Addind a lot of tylose will make it super stiff.
