I need cupcakes for this weekend and would like to bake ahead and freeze. My only question is-do I fill them before I freeze or after I thaw them out? I will be filling some of them with bettercream mousse and some with the raspberry sleeve filling. Thanks for helping!!

I think the best way is to freeze the cupcakes without the filling or frosting.

I freeze them in a freezer bag wrapped in freezer cling wrap and fill them when they thaw... oh let them thaw in the bag...

I always fill after thawing. Tip...pop those babies back into the pans to freeze...this keeps the shapes perfect.
