I made a batch of royal icing on the weekend and only used a small amount.. How long will it keep???? It is on the counter tightly wrapped with cling wrap??

If it is stored in an airtight container on the counter or in a cabinet it will be good for up to 8 weeks, maybe a little longer, but I have never kept any for longer.

I keep mine for about 2 weeks and then I ditch it. That's good to know that it can stay longer than that. I typically just throw mine back in the KA and whip it to get it back to the right consistency.

I keep mine for several weeks, but try to make some royal icing flowers...they keep indefinitely and as a plus, I always have flowers on hand for unexpected requests...
