Does anyone know how long an iced cupcake - using swiss meringue b/c - can sit at room temp before being consumed? Can you ice them the day before they are due to be eaten? If they are placed in the fridge iced, will the b/c still maintain it's velvety texture when brought back to room temp? So many questions... icon_biggrin.gif

Several days in a cool (air conditioned) room.

But I mean I would only do one day as in 24 hours for a paying order--but a smbc iced cake will be good to eat for several days at cool room temp.

But once I ice I chill my cakes so...

It would be good out of the fridge for probably 2-3 days. But like k8 said...if it's an order, no more than 24 hours. And then make sure you tell the customer that if they have any left over, they should store them in the fridge. That way you are covering your butt!
