I want to pour chocolate into a 6" cake pan to mold it to that shape. Should I grease or line the pan first?
I wouldn't grease it! may use parchment though
since I'm usually in a hurry, I always stick my molds into the freezer. One reason being that it helps harden up the chocolate quickly and two, every time the chocolate comes out with no fuss and no mess. I don't know if this is the politically correct way to do chocolate molds, but it never fails with me. I've done pan shaped chocolate too, so it should be fine! Good Luck!!!
Yes, freeze it. No need to prepare the pan. It will pop right out. I just did this last night with a 4" pan and it worked beautifully.
