I found out my Dad doesn't eat chocolate anymore, I'm making vanilla cakes but haven't decided what would be a good filling (it's so foreign to me not to have chocolate involved somehow.
Thanks for any suggestions. Also any recipes for the filling would be appreciated.

I've been making a variety of fruit cream fillings lately using whipping cream, fruit, and a little stabilizer:
- Whip cream in mixer until stiff (helps to use cold bowl and beaters)
- add a little powdered sugar and a dash of meringue powder
- Fold in any flavor canned fruit pie filling or frozen/fresh fruit simmered with sugar and reduced
Strawberry has been the most popular. I prefer raspberry. I have a 3 tier wedding cake scheduled in a few months - they are doing all white cake and a tier of each blackberry, raspberry, and strawberry cream. YUM!
