I am making a wedding cake for my daughters best friend and I am not a professional by any means. I made several test cakes for her to try. She had her familydo a taste test and by far the winner was a cheesecake and raspberry filling. I guess I cheated and talk about "from a box baker", I used the filling from one of those no bake cheesecakes. I guess it was Jello brand. I used heavy cream instead of milk to make it thicker although I am sure mild would be fine and saved the bag of graham cracker crumbs for later use. The mix was $1.82 at Walmart plus it took the worry out of measuring. Just a though but you might want to try it.
