White food colouring works great.

I ran into the same problem with my Nascar cake. I tried the white food coloring and it worked great but it takes FOREVER to dry.

When I do eyes, I make the whites out of white fondant/gum paste then put the colors on top. I am working on a cake for my niece's 16th birthday and made a dog for the top. It is not done yet, so I'll attach a photo so you can see. In this case, the eyes themselves are white gum paste, but the glimmer in the eyes are white food coloring.
