I have 6 cakes to do in the next two weeks-- I just bake as a hobby! Can I freeze cakes today (Saturday 6/20) for a cake I need to have done on Monday June 30th? Also, is there a special way to defrost? Thanks so much!

Yes you can freeze. Wrap the cake 2x in plastic wrap, then in freezer paper and put in a zip lock bag and freeze. When you defrost, you can leave the cake on the counter out of the plastic bag and freezer paper. Leave on the plastic wrap so you don't have condensation on it. Works like a charm and your cakes will be moist too.
