Hi, my daughter wants a strawberry cake with fresh strawberries for her birthday cake. I was wondering if I used cheesecake pudding with the fresh strawberries as the filling would it make the cake soggy or should I just use the icing with the strawberries? Thanks, I'm venturing into making my own cakes instead of buying them now. icon_smile.gif

I used a chocolate pudding last summer for a filling and it turns out just fine. Although, I did make the pudding, let thicken, and then I folded pudding into the buttercream icing. 1/2 and 1/2. I did this so I wouldn't have to worry quite as much about refrigeration and the pudding melting on me in the Texas heat. It was for my Mother's bday party and the party was outside in the July heat! I did keep the cake inside in the airconditioning though until closer to meal/ cake time. HTH

BTW, strawberry and cheesecake filling sounds delish together!

Thank you! I'm going to give it a try, the cake will be inside the whole time so no worries on it getting too hot.
