A bakery in Houston (ABC Bakery) made our wedding cake over 10 years ago. We've since moved, and I'm STILL trying to duplicate their buttercream icing! It was different in that it had a slight crunch to it, like you could crunch the actual sugar crystals - not overwhelmingly buttery, and no hint of shortening. It was just perfect. If anyone has a recipe for buttercream that turns out like this, I'd love to have it!

Thanks,

Stacy

This buttercream recipe is made with praline paste which contains ground hazelnuts and caramelized sugar that results in a buttercream with the crunch you described
