Sheetcake Layers?

For those of you who do sheetcakes: How many layers do you do-- one or two?

By definition a sheet cake is one layer - no filling.
Now, that does not mean you can't torte and fill &/or make 2 layers if that is the norm in your area. If you do be sure you charge for 2 cakes! That's one reason I based my pricing on how many cake mixes used in whatever size I made.
One can generally figure on 15-20 servings from one cake mix.
