can i bake the cakes one week before the wedding if i am covering it with fondant. how long can i keep it cool after i have coverd with fondant. i will not put it in a fridge , but i will keep it cool,
is it o.k. if i bake and cover it few days before the function?

I wouldn't bake it that far in advance. Most people bake on wednesday or thursday for a function on saturday. Especially since you are not going to refrigerate it. Just my opinion.
You can bake one week or 1 month in advance IF you freeze the cake layers.
Once they baked layers are cool to the touch (just a bit warm) wrap in plastic wrap and place in a plastic bag to freeze them. When you are ready to work on the cake remove from fzr to frig overnight (or similar time).
Cake can be finished 2 days before date. I wouldn't want to have it done before that as it would mean any leftovers will not keep fresh for customer more than a day or two.
