How Do I Stack This??

I know this is going to sound basic to you all but please bare with me.

I will be doing my first carved/stacked cake in a couple of weeks for my bf's birthday.
I havent decided yet if I am making him a stack of books or a football helmet.
This is my question:
if I make the football helmet should I still put sps plates in between the layers/cakes?? (yes there will be filling in the cake- most likely chocolate ganache).

If I make the stack of books, can I use an sps plate slightly smaller than the actual cake?? I am planning on making books that are rectangular about 10" long, so I don't want the 10" square plate hanging out on one side.

I would put plates between the books if you are making a few and stacking them. I wouldn't between the layers in the helmet.
