Help With Carved Grooms Cake

Hi, I'm making a Dallas Cowboys/Longhorns grooms cake. Requested that I carve a star (for cowboys) and longhorn on top of the star... not stacked on top of eachother though, just combined. ( I hope I make sense! ) My main concern is how to even carve a simple star? Just looking for any suggestions on carving cakes. Should I do a super big sketch first as a guide for carving?

I was going to bake two sheet cakes and place them side by side so it will be big enough. Just a little nervous. Also, the colors will be blue (star) and dark orange (longhorn)..... white border? Not crazy about the color scheme.
