Can Someone Tell Me About Ganache

if i make it, how long can it be outside withouyt being refrigirated?
Also do i fill my cake the same day or can i do it the night before and refrigirate it?

I've used ganache many, many times and I've never refridgerated it once in a cake. I've fill cupcakes the day before and a whole bunch of people at church the next day ate them. To my knowledge nobody got sick or died (me included!) I've made many cakes that have sat out for a day or two before being fully consumed and they've always been fine. I LOVE ganache!

I refridgerate a cake that is covered in ganache, the one time I didn't it started melting at night, and was sliding off of cake icon_sad.gif It was ok, but now I just pop in fridge. You dont have to though! Its fine out I think.
