Can I Bake-Freeze-Frost-Freeze Then Put Fondant

can I ?? I have a wedding cake for Saturday, I baked the cakes, can I fill and crumb coat then freeze again until Thurday or Friday???? So I can cover with fondant???

I have never done that but I would think you could as long as you let the cake thaw before putting the fondant on it. Say take out on Thursday, put in fridge to thaw slowly then Late friday you could put fondant on it.

I would bake, fill, and crumb coat before freezing. Then thaw on Friday, cover in fondant Friday night. That way your only freezing once. I freeze all of my cakes, either after baking or (the last couple) completely decorated with BC, adding fondant decorations when thawed.

i believe freezing a second time just causes your product to deterioate.
