I'm making a princess castle cake in which you cut a 11 x 15 cake into several blocks for the castle. Do you freeze somewhere along the line for a cut up cake? Before cutting, before frosting? I know there will be a lot of crumbs

Freeze for up to 3hrs before cutting to reduce crumbs and increase accuracy. Wrap it in plastic wrap so it doesn't dry out.
