I'm new to CC, just started my first Wilton class and I LOVE it so far! For our next class, I decided to make a Pink Champagne cake (using discoladys recipe) , but I'm at a loss as to what to fill it with. I'm afraid if I use a "strong" filling it will overpower the champagne taste in the cake, I was thinking of just filling it with plain 'ol buttercream, does anyone else have any other ideas?

vanilla bean cream
vanilla bean cheesecake mousse
