I am making roses for a cake tomorrow. I am using the Wilton Buttercream. I can't get the edges smooth on the roses, they are ruffled looking and while pretty, it is not what the client wants. Can anyone tell me what I am doing wrong?
Sounds like your buttercream is to stiff. Add a teaspoon of water and see what that does.

I have the same problem all the time, no matter how much I thin the icing- I think it's b/c my hands shake a lot, so I'm not holding them still while making the petals!
Thinning the icing seems to have helped a bit, but now they are getting big! I think I need some more practice :0)
