I am doing my first tiered cake for party on Sun. College and h.s Graduation party for around 70 people. I think it will be a top 8in round and bottom 12in square. I'm scared! I have several questions...If I bake early in the week and freeze do I fill or just freeze cake? I wanted to fill with either a choc. mousse or ganche? And can I make fondant accent(bow or school logo) ahead of time do you refrig or not? I think I will use wilton ready to use fondant cause I have not done much with fondant. And finally, any suggestion on finding navy blue color? The school colors are navy and light blue. Thank you for all the inspiration

I usually just ice and refridgerate the week of. You can make your fondant or gumpaste pieces early and definately dont refridgerate them. Just put them in an airtight container. Use wilton royal blue with a touch of black for navy. Dont panic, you'll be fine. I have a 3 tier grad cake I just done in my pics.
