Nic Lodges Gumpaste??

I am thinking of making my own gumpaste but per his directions I need a Kitchen Aid with a paddle to mix it up in. I do not have a kitchen aid and the stand mixer I do have does not have a paddle. Can I use the regular beater to make this.

Also how hard is it to make.

I've seen the recipe scaled down for smaller mixers. The reason that the directions mention the kitchen aid mixer is that the recipe is likely to burn out the motor of a smaller mixer. I'm guessing you could do the part where you mix egg white with powdered sugar in your mixer, then for the step where you beat in the tylose, you could do that by hand, and when it got too stiff to mix anymore, then you could knead it. You have to knead it when you make it in the KA anyhow. It's kind of hard to do, even if you've got big tough hands like me icon_biggrin.gif I usually will divide it into fourths and knead one at a time.
