Hi all - I'm judging this contest again this year. It's our 2nd annual Big E Cake Decorating Competition - New England's Great State Fair in West Springfield, Mass., on September 22nd. hi,
this is my first ever cake competition so i still need to make sure i understand the competition rules and am not disqualified. the big e rules say:

1. Tiered cakes should have a minimum of three inches in height between tiers.
--> this means each tier must be 3 inches in height minimum, right?

2. All sculpted cake entries must be made in real cake. Dummy cakes may only be used for any non-sculpted cake.
--> does this mean tiered cakes can be dummy cakes?

3. Only cake boards and any necessary supports are allowed for inedible items
--> does this mean wires, which will be part of the design, or to support pieces of fondant, will not be allowed?

4. non-professional or professional entry
--> should i enter as a professional or non-professional? i don't have a cake business yet, but have sold some cakes to friends.
