It is my birthday and wanted to make a white vanilla cake and every recipe i try offline is like poundcake help!
Happy birthday and welcom to CC!
You can always use shortening, eggwhites, and clear vanilla if you really want a white white white cake.
I use the one of the Whimsical Bakehouse, its realllly white, only eggwhites in it and vanilla essence and not a pound like. I like it a lot, it's sweet but has a great bouncy texture, I always fill it with something a bit fresh like lemon curd and cream or something with raspberry.
Here is the recipe:
6 ounces unsalted butter
2 cups of sugar
1,5 teaspoon of salt
Beat all this together at high speed until light and fluffy.
On a piece of wax paper, sift together
3 1/3 cups cake flour
1 1/2 teaspoons of baking powder
3/4 teaspoon cream of tartar
Add the dry ingredients to the butter mixture alternately with:
1 1/4 cups milk
3/4 teaspoon pure vanilla extrakt
In a seperate bowl beat until foamy
3/4 cup egg whites (about 6 to 8 large egg whites)
Continue beating at high speed while gradually adding:
1/2 cup sugar
When stiff peaks form (not to stiff!!) fold in the whites into the batter with a rubber spatula. Blend just until the whites are evenly distributed.
Yields: 9 cups of batter for 2 10" pans, fill one of the pans with 31/2 cups and the other one with the rest. Bake for 20-25 minutes (the less fuller pan) and 30-35 minutes for the fuller pan at 350ºF.

this one was submitted on another post as most moist white cake ever. i know the title says "coconut" but the cake itself is not really coconut despite the cream of coconut. it's a lovely light just off-white cake that tastes like vanilla heaven .
this may not be the truly white, but it is very close and it screams "cake" not "pound cake"
