Baking on Wed....icing on Thurs....deliver on Friday.....serve on Sat. Can I mix fresh strawberry pieces in the buttercream filling for this cake....on this timetable.....would it need refrigeration? Thank you!
I wouldn't leave it out of the fridge for more than 4 hours total and that will be the time when the display it.
If you are going to be putting fresh fruit in that should be done on friday and then it MUST be refrigerated until the wedding.
Cut fresh fruit goes really mushy and is unapetizing after a few days in the fridge. If you leave it out of the fridge it will just be spoiled and off. Strawberries will also bleed when they come into contact with sugar.
Why not use strawberry flavouring?
I would always put fresh fruit in on the day as personally I like it fresh. That of course means that the decoration must be simpler to accommodate this last minute decorating.
