I've had potatoes in replacement of carrot for my carrot cake. It tasted a bit odd.

I don't remember any and don't get search results using potato and starch. Are you reading Warren Brown's book? I'm anxious to try some, but I haven't found anything but potato flour in stores. To order online, it is less than $3 for the starch and over $7 in postage icon_mad.gif . Grrrrrrrrrrrrrrr

You can purchase potato starch at Whole Foods.
