writing "Congratulations!" on a 6" cake? Usually followed by something like "Samantha Elizabeth".

Yes-but maybe charging for a decorated cake board and doing it on there could help?

There's no charging. It's my job. (pastry chef) People show up for lunch or dinner and ask their server if they could have a "special" cake for whatever it is they're celebrating. The server says "yes" and I'm left scrambling around trying to serve something that at the very least is not frozen. Even if I keep decorated cakes in the freezer, there's never any time to thaw them. ARGH!
