The Best Way To Make A Sponge?

After years of cooking Victoria Sponge and little sponge cakes, I think the best three tips are...

1) ALWAYS cream the butter/marg and sugar by hand
2) Sieve the flour at least twice
3) Never open the oven door whilst the cake is cooking

Can anyone trump those?
