Chocolate In Ganache

What type of chocolate do you use in ganache that you are putting under fondant, is this ganache firm in humid weather or will it sweat causing the fondant to do the same?

Hi, I normaly use chocolate that has50% or more cocoa solids. The best one is callebaut. icon_smile.gif
