I am making a milk chocolate cake with amaretto buttercream. I'm going to try chocolate gonache for the first time. Does anyone have any ideas for what I could use for the filling?

what about a mocha or chocolate mousse filling? or whipped chocolate gananch, if you are going to be making it anyway, make extra and whip it up for a filling.

you should be able to use your normal ganache recipe, after it has cooled and thickened, whip it up with a whisk attachment on your mixer. it will turn lighter colored and fluffy.

ok - pardon my ignorance here, i'm still new at this. If I wait til its thickened, wont it be too late to use as filling because i would have needed to frost and top the cake already. I'm sorry I guess I dont quite understand the process. Thanks so much for your help. I need to work on this on my lunch break!

You would have to make the ganache in advance so that it would have time to cool.

you would probably make two separate batches or a double batch. well depending on how much cake you are filling of course. you can make one batch first, let it cool, then whip it and fill the cake. then make the second batch for the icing. or you can make a double batch, separate it, cool both, whip one to fill the cake, re-warm the other to pour over the cake.
