First Post... What Frosting Do I Use To Spread Over Multiple

I want to make something for my daughter's 1st b -day playdate with our school mates. I've been taking Wilton's classes and I'm really new to all of this but want to make cute things for my kids and family parties. I have seen these cupcake "cakes" and the frosting looks really and spreadable. What is being used? Some type of whipped topping?

You can use slightly thinned buttercream...

i read somewhere that you should "glue" the cupcakes to your board by using frosting. Does anyone do this or have a better idea for making the cupcakes stay in place while frosting them as a whole?

The best thing is to use the icing to "glue" them to the board. just a bit to make them stick while frosting the whole thing.
