I am hoping someone can give me some guidance on a cake I've been asked to do. The client is asking for a cake with a filling that requires refrigeration. She would like the cake covered in fondant with gumpaste flowers on top. I've done each of these components before, but not together....so here are my questions;
1. Can a cake covered in mmf be refrigerated? If yes, do I need to do anything differently?
2. I'm assuming gumpaste flowers cannot be kept on top of the cake in the cooler. Is this accurate?

I know there are some people on here that refrigerat their MMF, I have never had luck with that. I know that you do not want to refrigerate your flowers/gumpaste, that would probably be a disaster. Sorry I am not more help.
