I have worked with fondant, personally like the Fondx brand, and did one cake with gum paste. Didn't like that much for the gum paste was so hard. When removing from the cake it took the buttercream with it.

There are so many different types of modeling sources on the market. How do you know which to use for what? Is it personal preference or does one work for a specific project better than the other?

I made gumpaste decorations and applied to the cake. When taking them off it pulled some of the BC off as well. You could see bare cake.
