I wanted to bake a cake tonite (Tues) Deocrate with fondant on Wed for a party on Sat. It is hot here where I live but I keep my home cool. Would the cake spoil? If I bake tonite and put in freezer until tomorrow would that be ok? Thanks, this is for a friend who's daughter is being deployed on Mon so I want it to be perfect.

I've usually freeze my cakes for up to a week and they stay fine. Some people do it for months. I personally don't think you need to freeze it if you are going to use it tomorrow anyway. Just refrigerate it. Make sure you wrap it really well so it doesn't dry out.

Thanks for you help. I ended up baking it so I will wrap well in the fridge and put the fondant on and deocrate Friday.
