Does anyone have any good recipes for a sugar-free cake (and icing)... I have a customer who is diabetic..

For the cake, I would use Splenda.
I think you may need to talk to the client a bit more. Sugar free does not mean it fits into a diabetic diet. You will need to know how may grams of carbohydrates the cake and frosting contain. For instance, that sugar free icing recipe lists honey as an ingredient - strained or extracted honey can contain 17 grams of carbs per tbsp. while a "regular" small frosted cupcake may only contain 28 carbs. two good websites for recipes are the american diabetic association and the dlife.
