I need 7 11 x 15 sheet cakes for a wedding on Saturday. My plan is to bake on Wed....wrap in plastic wrap....ice on Thursday....put in cake box and wrap cake box in plastic wrap....deliver on Friday. Will they still be good on Saturday? Is there a better way? Thanks!

They'll be fine. Once they're iced I wouldn't worry about wrapping the cake boxes in plastic. The icing will seal in the cake and keep it fresh.

When I have a lot of cakes due the same day or weekend I always bake Tue or Wed. prior and freeze until I frost and or cover with fondant. I then leave them out. Dont like it when the frosting sweats after I take them out of the fridge. I had three this weekend and one was done yesterday morning, it is in the box ready to travel tonight. The other two I finished today. Good Luck
