when stacking cakes do you have to cover the cardboard cake board with anything or can you put the cake directly on it??

You should cover the cardboard with freezer paper.

I use parchment paper.

You can place the cake directly on cardboard cake circles... some choose to cover them, but it's an unnecessary step, in my opinion.
