Dragon Cake Tips?

I have an order for a dragon coming out of a cave or volcano. My questions are this:
1. What type of structure should I use to hold his head vertical? and
2. What medium should the head be carved out of...cake or something else like Rice Crisp treats?

If anyone has done something like this, any input would be greatly appreciated! I have attached a pic of what type of dragon the client wants (from the neck up and two front claws only)

I wish I could help but all I can say is that's an amazing cake. Wow!

I would go for gumpaste/fondant mix with a wire incorporated or rice crispies, really depends, how large it will end up being. Whatever you decide, make them well beforehand and let dry completely
