a pastry cream and folding in whipped cream?
Also, if I put this between a cake will it make the cake soggy if it stays for too long?

You certainly could! I do that when I don't have enough pastry cream for fill cake. The whipped cream extends it. It will not make the cake layers soggy but you will have to keep it refrigerated til shortly before serving time.
