I'm about to attempt (ok, not until next month, but I want to be prepared) my second topsy turvy cake. The first attempt was for the same customer, only it fell before I even got it year later, and I'm ready to try again icon_smile.gif
My question is whether or not I can fill my layers with anything except buttercream. I usually use mousse, but think that's why it fell last time. Does anyone ever fill their topsy turvy's???

Hmmm, thanks for the reply! That would probably be even better at holding everything together than buttercream....maybe I'll try a ganache...
