I'm wanting to make some cakes this weekend, and send them to work with some friends to get rid of them, but if I make them saturday-ish will they hold up until Monday-Tuesday?
I'm thinking about making a coconut lime cake, and a lemon blackberry cake.
the coconut lime cake-coconut cake with a lime mousse, or maybe like a key-lime pie type filling, with butter cream icing, and for the lemon blackberry, a lemon cake with some macerated type blackberries for filling with a whipped cream icing.
I'm also planning on kind of "deconstructing" them into individual little plastic cups so they almsot make little trifles instead of one big cake.
Any thoughts on if they'd last or not?
Also, does the butter cream sound too heavy with the lime?'
It should be fine. I would say after Wednesday, then no. But Ive had cake for about four or five days and it was still good.
