I have a cut out cookie recipe that I have been using that calls for 3 whole eggs and 5 egg yolks.

My question is what do the egg yolks do, and how would the cookie differ if I used 1 whole egg in place of 2 egg yolks. It seems like such a waste of egg, although I do like the cookie.

My recipe calls for 6 egg yolks and 4 whole eggs - similar to yours. I have no idea why this is, but I don't mess with perfection because the cookies are awesome. I usually scramble the left over egg whites the next morning for breakfast, or mix it in my dog's food - it is a nice treat for them. icon_smile.gif
