I want to make a lemon cake filled with raspberry jam/filling in June. I am going to do a trial run this weekend to check out he flavours/items I need etc. (I live in Boston and will be making the cake in Toronto).

I need an easy frosting as I won't have all my equipment and supplies with me to make my standard buttercream. Could I mix lemon pie filling with Dream Whip/whipping cream and use that as a frosting? I'm not keen on using cool whip as a base although that is an option.

Any other frosting options are appreciated. In a pinch I'll use the canned DH lemon topping.

can you make your buttercream and take it with you? just a thought.......

i have heard of some people adding lemon flavored gelatin powder to their buttercream but i am not sure on the amount or what flavorings to omit.

I add lemon curd to my buttercream for a lemon flavor. You can try that with whipped cream.
