I have seen several recipes for buttercream & some call for corn syrup & you can also add corn starch? what will that do? I never tryed it but my bc seperates when you use it & refreg. to harden & then use again ???
I believe that the corn syrup addition helps with the smoothness of the buttercream as well as helping to thin it slightly. Anyone that knows differently please correct me. And adding cornstarch to buttercream will help cut the sweetness. Some people request a less-sweet buttercream so to achieve that you can replace a small amount of the powdered sugar with cornstarch.
