Has anyone make a layered cake using ice cream as the middle layer instead of BC? I was thinking that I need to put a thin layer of BC and then put a dam of thick icing around the edge, freeze and then decorate. Has anyone tried this? Any advice would be appreciated.
Thank you, Angelia

I love making cake likes this. You can line a cake pan with plastic wrap* Place the first layer of cake in then fill with the soft ice cream, then top with the second layer of cake (or multiple torted layers, if you prefer). Wrap TIGHTLY with plastic wrap and press down on the top to make sure there are no air pockets in between the ice cream and cake. Freeze overnight, unmold, and then decorate as usual.

*If you have cake rings, you can also use one of those and line it with acetate.

Do you frost in between the layers so that the ice cream doesn't soak into the cake too much?
