I have just purchased some good quality Dutch cocoa and now I need a good chocolate cake recipe to try it out on. For those who are not aware, Dutch cocoa cannot be substituted for regular cocoa because it is alkalized. I am looking for an original Dutch recipe, anyone Dutch out there or anyone with a Dutch cookbook?

Recipes that have enough acid in them allow for the substitution of dutch cocoa, such as buttermilk or sour cream. I've used dutch cocoa w/ the double chocolate layer cake on epicurious and it comes out delicious.
