Cracked Cookie Dough Help!

Does anybody know why my vanilla sugar cookie dough is hard to roll out, cracks and splits? It looks fine when I make it, I put it in the fridge to chill and when I roll it out it is hard to keep together and cracks so my cookies fall apart. Thank you

It sounds like you have chilled the dough too long?

Maybe try rolling out straight after mixing/kneading lightly (between parchment paper) to your desired thickness, then chill on sheets for 10 minutes or so before cutting your shapes. Remember to re-chill the cut shapes before baking.

I have to ditto the previous poster.

Sometime the dough really doesn't have to be chilled to roll out.

Thank you for your reply, that could be the problem as I have been making the dough days ahead although last night I had made fresh dough and it was only in the fridge for half an hour, but I will try rolling it out straight away and see what happens. Thanks again.

Yup, definitely sounds like the dough is too cold when you've rolled it out.
