Customer is asking for a sheet cake with cream cheese filling for 20 people. The only rectangle pan I have is 11 x 15 (i think) and it will serve a ton more than 20 people. I talked her into a square cake but I would like to give her what she asked for.

The pan requires 2 cake mixes. Do you think I could use 1 can mix and have the layers shorter? I don't have much luck torting sheet cake without it breaking? tia

It may not be the normal shape but - use the normal amount of mixes, cut the cake in half, fill & stack. Or yes, just use half the regular amount (but keep a closer eye on it, it will bake faster).
